|Vegan Blueberry Muffins|

I found a great one bowl vegan blueberry muffin recipe recently from Vegetarian Times online. Everyone who has tried them gives them high marks. I've made them twice now altering the recipe slightly the second time by adding more blueberries and using a 1/4 cup less sugar. The turned out terrific either way. The organically grown blueberries are from Country Pleasures Farm (one of the farmers who comes to our local farmers market on Sundays). A trick I learned from America's Test Kitchen is; when using blueberries in cakes freeze them first before putting them in the batter (they don't bleed blue or break apart in the mixing that way).
