Vegan MOFO Day 8 Moroccan Christmas Bean (Broad Bean) Dip Recipe - Bessara

While it may not look beautiful this Christmas Bean Dip recipe is fabulous!   Serve it warm with chips, tortillas or pita bread.

1  cups dried Christmas beans
4 cloves garlic
two chopped red onions
1/3 cup olive oil
1/4 cup lemon juice
1 1/2 teaspoons salt
1 teaspoon ground cumin
3/4 teaspoon sweet paprika
1/2 teaspoon cayenne pepper
Soak the beans overnight or longer.  Add enough water to cover and add chopped garlic and red onion.  Cook on medium-high until beans are tender.  Place in a food processor and blend until smooth.  Add spice and blend again.  Serve warm.  Yummy!
