Vegan MOFO Day 5 - Broccoli Bisque

Tonight we made Broccoli Bisque
2 medium onions chopped
2 plus cups chopped Broccoli
2 cloves garlic minced
2 Tbsp oil
1 1/2 Tbsp Cashew Butter
4 cups Vegetable Broth
1/4 cup soy creamer
1 tsp dried thyme
1 tsp dried dill
splash of lime juice

This Broccoli Bisque was light, refreshing and heart healthy.

Heat a dutch oven.  Add cooking oil and onions.  Cook the onions of a few minutes.  Add the broccoli and sauté until green color deepens.  Add vegetable broth and simmer for 15 minutes at a medium heat.  Reduce heat and add remaining ingredients.  Use a blender to make the soup creamy (I like to use my emersion blender).
